know your station.

saying the word routine can instantly make you think “slump,” “boring,” “avoid.” there is also something so comfortable, warm, familiar, and dependable about the work routine.

at work, anywhere you work, there is a routine. your body wakes up around the same time, take the same way to work, get there, and set up.
the knives come out and you do a quick check of all the stuff. one or two small things are out of place. you know where, what, and how much of everything you will need.

you also know who did what. you get to know how people work. you know if they prep a lot for you, you know if they were busy and not able to prep much. these are they things you get to know. you know.
knowing your work station is so much more than just knowing some recipes.
