Day 13 – 30 Days of Discipline

A few years ago if someone would have told me to bake something, but not use any flour, sugar or butter….I would have said that was impossible. But tonight, the urge to bake hit and into the kitchen I went. I chose 4 recipes from my Baking Pinterest Board and started to bake.

In under 2 hours I have all these goodies and the rest in containers for the freezer. No sugar. No flour. No butter. All yummy!

I realized part way through baking I had every ingredient I needed for healthy baking. I didn’t need a list or a dash to the grocery store or assistance in the health food aisle. I just went to my pantry and everything was there.

I’m proud of the changes I’ve made in my life and how important health and nutrition are to me and my family. Jade tried one of everything and gave a thumbs up to them all….the Lemon Coconut Muffins are over the top!

The discipline of staying focused, staying committed and making positive changes for my health were reflected in my evening in the kitchen. Knowing I can do this on my own and even help others change their lives is a good feeling.

Now, on to my coffee and fresh baked goodies!
